Yesterday Rooms 22 and 13 baked gingerbread horses to sell to raise money for Riding for the Disabled. (RDA)
Today, we iced them and put sprinkles on them. They turned out beautifully!
The cookies will be on sale for $2 each outside the information centre on Thursday afternoon at 2.30pm.
Thank you to all the wonderful parents who have been helping us bake and ice. We couldn’t do it without you.

INGREDIENTS
For 15 Person(s)
Ginger Bread Cookies
250 Grams Butter
1 Cup Icing Sugar
2 Fresh Eggs
1/2 Cup warmed Golden Syrup
4 Cups Flour
1 Tablespoon Cocoa
1 Tablespoon Ground Ginger
2 Teaspoons Mixed Spice
1 Teaspoon Baking Soda
1/2 Teaspoon Salt
GINGERBREAD COOKIES DIRECTIONS
Preheat oven to 180°C. Line a baking tray with baking paper.
In a large bowl, using an electric beater, mix the butter and icing sugar until light and fluffy. Add the eggs, then the warmed golden syrup, and mix well. Add the rest of the ingredients and mix thoroughly. Wrap in cling film and refrigerate until firm, ideally about 2 hours.
On a lightly floured board roll the dough to 3 – 5 mm thickness and cut with cookie cutters. Transfer to the prepared tray. Bake for 10 – 15 minutes. The cookies should be just colouring brown at the edges. Coo for 5 minutes on the tray, then transfer to a wire rack. Ice and decorate when cold. Sore in an airtight container.
